TASTE: mature pecorino, aged for many months, with a very intense and slightly spicy flavour. The maturation in a tanning bed with fig leaves gives the cheese a unique aroma.

RECOMMENDED COMBINATIONS: given the particularity of this cheese, its aroma and its particularly intense taste, it is recommended to consume it pure to fully enjoy all its characteristics; a grape jelly or a delicately flavoured honey make the tasting more interesting. More suitable at the end of a meal, it can also be served as an appetizer together with other more delicate cheeses.
