Description

Presentation: peach blossom pink wine, reminiscent of the scents of spring flowers, malt and spices and reminiscent of the earth. Wine obtained from the white vinification of red Ciliegiolo grapes harvested at the beginning of October. The resulting must ferments in complete freedom without added yeasts and without temperature control in open truncated conical containers. After racking, it matures throughout the winter in vitrified cement barrels and acquires clarity thanks to the cold and two rackings, one in December and one at the end of February following the waning moon. No sulfur is added at any stage of processing or even in the final bottling. In the vineyard, principles of absolute respect for nature are followed (use of sulfur and copper) and only rarely is the soil enriched with fertilizer obtained from the company's animals. The company : for three generations the Mattioli family has been involved in agriculture and in particular wine has always played an important work aspect by virtue of its original nutritional function. The choice of varieties was dictated by historical tradition, a sort of photograph of what was planted before the Second World War. Therefore, in addition to local vines such as Trebbiano Spoletino and Sangiovese, there are varieties that can be defined as traditional based on the age of the plants, which is over 40 years old, and they are Barbera, Merlot and Greco. Respect for the cycles of nature and the total absence of herbicides, pesticides and weed killers have placed the company in the sphere of natural wine for a long time now. Spontaneous fermentations are practiced at free temperatures and no sulfur is added during bottling. The containers are made of glass cement, glass resin and steel, the large wood is still in the experimental phase. The decanting is carried out only based on the lunar cycle. Vittoria and Anna, the owners of the company, motivate their actions only driven by the craftsmanship that is handed down over time and by respect for the identity of each individual wine”
