Grape varieties: Sangiovese

Land: sandy-clayey with high percentages of limestone and rich in minerals including calcarenites and calcites

Alcohol: 15%

Fermentation: the grapes are destemmed by hand and pressed by foot. Fermentation on the skins with indigenous yeasts (spontaneous) without temperature control in small oval concrete barrels. Maceration on the skins for 18-21 days

Maturation: on the fine lees in used oak tonneaux and barriques for 12 months and for another 12 months in concrete barrels

Refinement: racking and bottling during the waning moon (according to the biodynamic lunar calendar). Bottled in August 2020 without any clarification or filtration. Bottled for at least 12 months in the cellar before being put on the market

Years of ideal consumption: 3-5 years

Serving Temperature: 16° ​​– 18°C

Pairings: meat dishes, game, mature cheeses

Presentation : Natural wine “La Cupa”, full-bodied and tied to the earth, strong and sensitive at the same time. Selection of the best Sangiovese grapes from Vigna Cupa and Vigna Crocefisso in the Torgiano area. The grapes are destemmed by hand and pressed with the feet. Fermentation on the skins with indigenous yeasts (spontaneous) without temperature control in small oval cement barrels. Maceration on the skins from 20 to 60 days. Dark ruby ​​red color. Intense and complex aroma that recalls red fruits, plums, wild berries. Good acidity, evident tannin, a wine with structure and body. The company : Fattoria Mani di Luna was founded in Torgiano in 2012 by three friends: Alessandro, Rocco and Simone, with the aim of redeveloping the company by converting it to organic and biodynamic farming methods. The farm follows the lunar cycles associated with the movements of the constellations and through manual and artisanal processes tries to obtain natural products of high nutritional and energetic value while respecting the plants and the environment.
